It’s a month until my birthday and honestly, I ammm miserable. Jobs are hard, we’re moving back to LA thankfully and finally. We have a sublet for March and we’re in the market for a new place and it’s been a difficult process. I’ve watched my dream apartments slip through my fingers while I’ve been suffering in the cold in Big Bear. I am turning 35 this year and I’m delaying my birthday until I feel like celebrating. I want to be settled in a beautiful apartment with all my things back where they belong. This year was amazing and I’m so thankful but I miss my old life so much.

They’re beta-testing full song listens on TikTok through Apple Music, they’re also testing listening parties. This is only for Apple users, I think everyone else gets a 30 second preview. I think these would be great, I wish there was a Spotify option though as a Spotify girly. TikTok is such a music discovery tool and I think this will be super useful for that streaming crossover.
Vegan Recipe: Sweet Potato Quesadillas*
These have zero cheese in them so don’t come at me and I have no photos because it’s a struggle meal, but our struggle meals deserve love and this one is my favorite meal when I just can’t be bothered. It’s super filling and feels like a treat even though it’s pretty healthy.
Ingredients (Makes 1-2 depending on how big your sweet potato is)
1 sweet potato
1 can black beans
2-4 tortillas
Jalapenos (optional)
Pico de Gallo, homemade or store-bought (optional)
Stab your sweet potato a couple of times with a fork and put it in the microwave for like 6 minutes, keep adding 30 until really soft and you can stab it all the way through. Rinse your beans and add to a pan with some oil, season with whatever spices you have on hand, I mash them a little so they are easier to spread. Scrape out the sweet potato and add to one side of your tortilla, add the beans to the other side. If using jalapenos, I slice them and put them inside for some spice. Corn also is bomb here if you have it. Fold the tortillas over and add to a pan with some oil and crisp them up. Slice them in half and serve with your pico and whatever hot sauce you want.
